Chocolate Cupcakes with Kiwi Buttercream Frosting {giveaway}

So, the moment you have all been awaiting for:

Just as promised! But before I divulge on how to go about winning these lovely items, let me introduce you to the yummiest kiwi combo yet!


Its good. Do I have to say more then that? It has the same zesty-ness as a granadilla icing and all the juicy flavour of a kiwi. WOW!


And the chocolate-kiwi-zesty-ness is a really nice combo. I mean, it doesn't beat the choc-mint duo, but it's a pretty close second :)

I made a batch of these chocolate cupcakes for this post.


I think I over baked them a tad, but they were still good. I love a very moist cupcake, and over baking is such a common cupcake mistake! These cupcakes are supposed to be baked for 15-18minutes, and I think I left them in for 20. Two minutes can be fatal to a cupcake! Ha Ha!


Moving on...aren't these Zespri kiwis one of the most beautiful fruit ever?


I made a simple vanilla butter cream icing as a base for this icing. I had to adjust the amount of butter that I usually use because the kiwis were just so juicy!


It made such a pretty icing! A slightly greenish icing with little black flecks! And it tasted so good, I wanted to dig in with a spoon right here.

But then you wouldn't have gotten to see these:

They were so pretty, so I shared them on Instagram right away!

P.s - in case you were wondering - the gorgeous little pearly sprinkles are from Nicoletta. I used the pearl drops and the cream soft pearls. I love using cake sprinkles because they transform any cupcake into something special.

Anyways - these were too good not to share! And kind of a yummy way to end off a weekend!

Kiwi Buttercream Frosting

Yield: icing to ice 18 cupcakes
Prep Time: 20
Ingredients:
500g icing sugar
200g butter
1 kiwi, peeled and sliced
5ml vanilla essence

Method:
place icing sugar, butter and vanilla into the bowl of your mixer
beat until pale and fluffy
added sliced kiwi
beat to break up kiwi
ice your cupcakes!
